The journey began with Crispy Golden Chicken with Almond Flakes—where golden, crackling skin met handmade shrimp paste, accented by golden garlic and almond slices, perfectly complementing the citrus notes of Changyu Emerald Reserve Chardonnay. Scottish Razor Clams with Fresh Sand Ginger brought together the herbaceous zest of sand ginger and the mineral crispness of white wine, evoking ocean breezes. Meanwhile, Japanese-style Century Egg Sauce with Sea Urchin Tofu presented an innovative base of century egg sauce paired with dashi-infused tofu, topped with Hokkaido sea urchin and salmon roe for a luxuriously layered texture.
