How to Make it?

Lilan Winery is established on a hillside, taking full advantage of gravity-flow winemaking techniques. Grapes are meticulously hand-harvested and transferred by gravity to preserve the integrity and freshness of the berries. Post-harvest, dry ice is used for cold maceration to minimize oxidation and extend the pre-fermentation phase, enhancing aroma extraction and flavor stability. In December each year, the winemaker conducts a systematic tasting of the base wines to select the most suitable oak barrels according to the unique profile of each batch. The winery utilizes barrels from three renowned French cooperages, with aging periods ranging from 12 to 18 months. The result is a wine that is both vibrant and elegant, offering fresh fruit aromas, refined structure, and a well-rounded, harmonious palate.
